Ingredients:
4 cloves, crushed
10 cardamom pods
2tsp each of coriander and ground cumin
1tsp each of ground cinnamon & chilli powder
1tbsp mild or medium curry powder
ΒΌ tsp turmeric
Fry light
1 large onion, finely chopped
5 garlic cloves, crushed
2.5cm piece fresh root ginger, peeled & grated
1 red & 1 green chilli deseeded and thinly sliced
300g potatoes, peeled & cut into bite size pieces
450g skinless chicken breasts, cut into bite size pieces
400g can chopped tomatoes
2tsp artificial sweetener
300ml chicken stock
Salt & black pepper
Boiled rice
Method:
1, prepare the ingredients. Mix the crushed cloves, cardamom pods, ground coriander, cumin and cinnamon, chilli powder, curry powder and turmeric into a bowl
2, spray a deep pan with fry light and place over a low heat. Fry the onion for 5-6minutes, or until softened. Add the spice mix and fry for a further 2mins to coat the onions
3, mix the garlic, ginger & chillies and cook for 2mins. Add the potato and chicken and cook for a further 2mins or until just coloured.
4, add the tomatoes, sweetener and stock. Mix well, season and bring to the boil. Reduce the heat to low, cover and simmer for 45mins, or until the potatoes are tender and the chicken is cooked through. Serve with boiled rice.
